If you don’t have a wok, a large, deep skillet or Dutch oven can work in a pinch, just be mindful not to overcrowd the pan.

Using fresh, high-quality ingredients is key to the success of this dish. The chicken breast provides lean protein, while the egg noodles offer that satisfying chew. Don’t skimp on the fresh ginger and garlic, as they form the aromatic base of this stir-fry. The combination of various vegetables not only adds essential nutrients but also a wonderful crunch and color. Feel free to substitute with other firm, quick-cooking vegetables you have on hand, like bell peppers, snap peas, or green beans.
- 300 grams chicken breast, sliced in strips (for even cooking and maximum flavor absorption)
- 250 grams egg noodles , dry (ensure they are the quick-cooking type for stir-fries)
- 4 tablespoons oil (high smoke point oil like canola, vegetable, or peanut oil)
- 1 tablespoons fresh ginger, finely chopped (for that essential aromatic kick)
- 1 clove garlic (minced or finely chopped)
- 140 mL water
- 1 small carrot , in thin slices or julienned for quicker cooking and even distribution
- 250 grams white cabbage , in thin strips (adds crunch and mild sweetness)
- ½ stalk broccoli , in small florets (for texture and a boost of green goodness)
- ¾ teaspoon salt
- 1 ¼ teaspoon sugar
Marinade
The marinade is the secret weapon for incredibly tender and flavorful chicken. The combination of soy sauce, salt, sugar, and pepper provides a savory base, while corn flour helps to create a protective coating that locks in moisture. The baking soda, a traditional Chinese cooking trick, is crucial for achieving that characteristic velvety texture in stir-fried chicken.
- ½ teaspoon light soy sauce
- ¼ teaspoon salt
- ¼ teaspoon sugar
- pinch ground black pepper
- 1 teaspoon corn flour
- ¼ teaspoon baking soda

Prepare the Marinade: In a medium-sized bowl, thoroughly mix together all the ingredients listed under ‘Marinade’ until well combined. The corn flour and baking soda should be fully incorporated.

Marinate the Chicken: Add the sliced chicken breast strips to the bowl with the marinade. Ensure that each piece of chicken is thoroughly coated. Use your hands to mix if necessary, to ensure even coverage.

Rest: Let the marinated chicken stand at room temperature for at least 20 minutes. This allows the flavors to penetrate and the baking soda to work its magic, tenderizing the chicken.
Prepare Fried Egg Noodles with Chicken

Cook the Noodles: Bring a large pan of water to a rolling boil. Add the egg noodles and cook them according to the package instructions, usually for just a few minutes, until al dente. Immediately drain and rinse them quickly under cold water to prevent them from sticking and to stop the cooking process. Transfer to a bowl and set aside.

Aromatics for Chicken: Heat 2 tablespoons of oil in a large wok or skillet over high heat until shimmering. Add half of the finely chopped fresh ginger and half of the minced garlic. Stir-fry for about 1 minute until fragrant, being careful not to burn the garlic.

Cook the Chicken: Add the marinated chicken strips to the wok, spreading them out in a single layer if possible. Fry until one side is golden brown and slightly crispy. Flip the chicken pieces and cook the other side until similarly golden brown. This rapid cooking ensures tender chicken.

Steam the Chicken: Pour 60 mL of water into the pan. Bring the liquid to a rapid boil, then quickly cover the pan with a lid or aluminum foil. This step helps to gently steam the chicken, ensuring it’s cooked through and exceptionally tender.

Remove Chicken: Let the chicken steam in the water for 3 minutes. Once done, carefully transfer all the contents of the wok (chicken and any remaining liquid/sauce) into a clean bowl. Set aside.

Prepare Wok for Veggies: Quickly wipe the wok clean with a paper towel to remove any burnt bits. Return it to high heat and add 1 tablespoon of fresh oil.

Aromatics for Veggies: Add the remaining ginger and garlic to the hot oil. Stir-fry for 1 minute until fragrant.

Stir-fry Vegetables: Add the prepared vegetables (carrot, white cabbage, and broccoli florets) to the wok. Stir-fry vigorously for 2 minutes. The goal is for them to be crisp-tender, not mushy.

Simmer Vegetables: Pour in the remaining 80 mL of water (from the initial 140 mL). Bring the liquid to a boil.

Steam Vegetables: Cover the pan again with a lid or foil and cook the vegetables for another 3 minutes on high heat. This will lightly steam them, ensuring they are tender while retaining a slight bite.

Combine Ingredients: Uncover the wok. Return the cooked chicken and any accumulated sauce from the bowl, along with the cooked egg noodles, to the vegetables in the wok.

Season and Toss: Add the salt, sugar, and light soy sauce (the main dish seasoning, not the marinade) to the wok. Toss everything together vigorously, ensuring the noodles, chicken, and vegetables are thoroughly coated in the sauce.
