- 30 grams butter, finely chopped (cold)
- 180 ml milk
- 125 ml water
- 1 vanilla pod, seeds scraped

- 600 grams fresh blackberries
- 500 grams jam sugar
- 400 grams pear, peeled, cored, and diced
- 2 tablespoons lemon juice
- 100 Ml dry champagne
