  • A conventional oven is used. When using a convection oven (with air fan) decrease the temperature with 30 °F / 20 °C

Ingredients

  • 10 sheets phyllo dough
  • 3 tablespoons butter , melted
  • ½ shallot
  • 10 sun-dried tomatoes
  • 5 eggs , size L
  • pinch salt
  • 200 mL yogurt
  • 100 grams cheese, grated
  • salt and pepper, and nutmeg
  • basil , optional garnish with slices basil

Instructions

  • Preheat the oven to 220 degrees Celsius (425°F).
  • Carefully cut each phyllo sheet in half, creating two square pieces. This ensures they fit perfectly into the muffin tin.
  • Using a pastry brush, generously grease five individual holes of a standard cupcake or muffin pan with the melted butter.
  • Gently press one square piece of phyllo dough into each of the five greased holes, allowing the edges to slightly overhang.
  • Lightly brush the phyllo layer with more melted butter. Repeat this process three more times, layering and buttering, so you have a total of four layers of phyllo pastry in each cup. This builds a sturdy and crispy shell.
  • Finely chop the shallot and cut the sun-dried tomatoes into small, bite-sized pieces.
  • Evenly distribute the chopped shallot, sun-dried tomatoes, and grated cheese among the five phyllo cups.
  • In a separate bowl, whisk together the eggs and yogurt until well combined. Season generously with salt, black pepper, and a pinch of nutmeg to enhance the flavors.
  • Carefully pour the egg mixture into each phyllo dough cup, filling them evenly without overfilling.
  • Place the muffin pan in the preheated oven and bake for approximately 18 minutes, or until the quiches are beautifully golden brown on top and set in the center. A knife inserted into the center should come out clean.
