  • 1 tablespoon oil
  • 4 shallots
  • 2 cloves garlic
  • 1 red chili pepper, deseeded
  • 1 teaspoon ground ginger
  • 1 teaspoon galangal powder
  • 2 teaspoons ground coriander
  • 1 teaspoon ground turmeric
  • 1 teaspoon palm sugar

  • Put some oil in a frying pan and fry the eggs until they’ve got a nice crispy brown layer.
    6 eggs, 1 tablespoon oil
  • Take them out with a slotted spoon and drain them on kitchen paper.
  • Slice the shallots, garlic, and pepper finely.
    4 shallots, 2 cloves garlic, 1 red chili pepper
  • Put them into the pan and stir-fry for 2 minutes.
  • Add the ginger, galangal, coriander, turmeric, palm sugar, pepper, salam leaves, and water into the pan.
    1 teaspoon ground ginger, 1 teaspoon galangal powder, 2 teaspoons ground coriander, 1 teaspoon ground turmeric, 1 teaspoon palm sugar, ⅛ teaspoon ground white pepper, 2 salam leaves, ¼ cup water
  • Stir fry for 1 minute so that the flavors blend well.
  • Add the coconut milk, lemongrass, and star anise to the pan.
