Ingredients

Chocolate Cake

  • 1 cups Dutch unprocessed cocoa
  • 2½ cups all-purpose flour
  • 2 cups sugar

  • 4 oz. cream cheese, room temperature

  • 1 tablespoon lemon juice
  • red food coloring, as needed

Instructions

Chocolate cake

  • Preheat oven to 350 °F or 320 °F.
  • Lightly coat a 10-inch (26 cm) springform pan with oil, then dust thoroughly with cocoa powder. Tap out any excess cocoa from the tin to ensure a clean, non-stick finish.
  • Line the bottom of your prepared baking tin with a circular piece of parchment paper or a baking sheet to prevent sticking and ease removal.
  • In a large mixing bowl, thoroughly combine all the dry ingredients: the Dutch unprocessed cocoa, all-purpose flour, sugar, baking powder, baking soda, and salt. Whisk them together to ensure even distribution.

  • With your mixer on the lowest speed, gradually add the wet ingredients. Begin by incorporating the eggs one at a time, followed by the egg yolk. After these are well blended, slowly add the warm water, vanilla extract, white vinegar, milk, and sunflower oil. Ensure each ingredient is fully incorporated into the batter before adding the next to maintain a smooth and consistent mixture.

  • Carefully pour the prepared cake batter into the greased and floured springform pan. Gently place the springform pan into your preheated oven.
  • Bake the cake for approximately 70 minutes, or until a wooden skewer inserted into the center comes out clean. Once baked, remove the cake from the oven and allow it to cool in the pan for 5 minutes before attempting to release it. If your skewer doesn’t come out clean, return the cake to the oven for an additional 5 minutes and re-test.
  • Carefully run a thin knife around the edge of the springform to loosen the cake, then unlatch the pan. Transfer the cake to a wire rack and allow it to cool completely to room temperature before frosting. This prevents the topping from melting or sliding off.
  • For a perfectly flat surface, gently invert the cooled cake onto a serving plate or cake stand. The former bottom of the cake is typically the most even and will provide a flawless base for your glaze and decorations.

Cream Cheese Topping

  • In a clean mixing bowl, combine the room temperature cream cheese, confectioners sugar, lemon juice, and your desired amount of red food coloring. Mix thoroughly with an electric mixer for at least 5 minutes until the mixture is smooth, creamy, and free of lumps.

  • Gradually add milk, one tablespoon at a time, mixing well after each addition, until the glaze reaches your desired pourable consistency – similar to thick yogurt. Be cautious not to add too much milk, as it can quickly become too thin.

  • Pour the luscious cream cheese glaze over the top of the cooled cake. Use an offset spatula or the back of a spoon to gently spread and level the topping, pushing some of it towards the edges to create alluring drips down the sides. For an extra artistic and eerie effect, use a skewer or a thin stick to pull down some of the glaze, creating more defined “blood” drips.

  • Garnish your spooky masterpiece with an assortment of plastic Halloween-themed insects, such as realistic-looking spiders and cockroaches. Natural extract, derived from real vanilla beans, offers a complex aroma and taste that truly elevates your baking. If you’re an avid baker, I highly recommend making your own homemade vanilla extract. It’s surprisingly simple, cost-effective in the long run, and you’ll have a superior ingredient at your fingertips that keeps well for a very long time, developing even richer flavors over time.

2. Red food coloring: The red food coloring is crucial for giving your cream cheese glaze that iconic, eerie Halloween look. You have several options: you can use liquid food coloring for a subtle hue, or for a more intense, vibrant “blood” red, I suggest using gel food coloring. A little goes a long way with gel colors; apply it sparingly with a toothpick or skewer, mixing thoroughly before adding more, until you achieve your desired haunting shade. For natural alternatives, a small amount of beet powder can provide a lovely pinkish-red, though it won’t be as intensely vibrant as artificial colors.
