  • 50 pieces wonton sheets, thawed (also known as pangsit sheets)
  • 1 spring onion, finely sliced
  • 1 clove garlic, minced or squeezed
  • 500 grams ground beef
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil, toasted for best flavor
  • 1 cm fresh ginger, peeled and freshly grated
  • 1 teaspoon Chinese 5 spices powder
  • 1 tablespoon Kecap Manis (sweet soy sauce)
  • 1 tablespoon dry sherry (or Shaoxing wine for authentic flavor)
  • â…› teaspoon salt, or to taste
  • Water, for sealing wontons
  • Sunflower oil, for deep frying

Instructions

  • Begin by preparing your aromatics: finely slice the spring onion, ensuring small, even pieces for the filling.
  • Next, peel the fresh ginger using a spoon or peeler, then grate it finely. This ensures maximum flavor distribution throughout the beef.
  • In a large mixing bowl, combine the ground beef, sliced spring onion, grated ginger, rice vinegar, sesame oil, sherry (or Shaoxing wine), Chinese 5 spices powder, and salt.
  • Using a garlic press, squeeze the clove of garlic directly over the bowl with the beef mixture. If you don’t have a press, finely mince it instead.
  • Using your hands, thoroughly mix all the ingredients in the bowl until they are well combined. This ensures the flavors are evenly distributed throughout the beef filling.
  • To prevent your wonton wrappers from drying out, keep the unused sheets covered with a damp (not soaking wet) towel while you work.
  • Set a small bowl of water next to your workspace; this will be used to moisten the edges of the wonton wrappers for sealing.
  • Lay a single wonton sheet flat in front of you. Take about 2 teaspoons of the beef mixture, roll it into a small ball, and place it in the center of the sheet.
  • Dip your fingers in the bowl of water and moisten the edges of the wonton wrapper. Fold the sheet over the filling to form a triangle, rectangle, or other desired shape. Pinch the edges firmly with your wet fingers to ensure it’s securely closed, preventing the filling from leaking during cooking.
  • Continue this wrapping process until all the wonton sheets or the beef filling has been used up. Place the finished wontons on a parchment-lined tray, making sure they don’t touch to prevent sticking.
  • Carefully preheat your deep fryer to 355 degrees Fahrenheit (180 degrees Celsius). If using a frying pan, fill it with enough sunflower oil to submerge the wontons, and heat it to the same temperature (use a kitchen thermometer for accuracy).
  • Working in batches of about 8 wontons at a time (do not overcrowd the fryer/pan), carefully lower them into the hot oil. Fry for approximately 2 minutes, or until they are golden brown and deliciously crispy. Remove with a slotted spoon and drain on paper towels to absorb excess oil. Serve immediately with your favorite dipping sauce!

  • Steaming Option: As an alternative to frying, you can steam the wontons. Place a steamer basket over boiling water and steam the wontons until cooked through, which usually takes about 10 minutes. This method yields a softer, more delicate texture.
  • Meat Substitutions: Feel free to experiment with the filling! Ground chicken is an excellent substitute for ground beef if you prefer poultry. For an even richer flavor, consider using ground pork or a mixture of pork and shrimp.
  • Vegan & Vegetarian Wontons: To create a delicious vegan (and therefore vegetarian) version, replace the ground beef entirely with finely chopped shiitake mushrooms.
