Ingredients

Tomato soup

  • 1 tablespoon vegetable oil
  • 1 shallot, finely chopped
  • 1 clove garlic, minced
  • pound tomatoes, quartered
  • cups vegetable broth
  • 1 teaspoon sugar
  • 1 sprig dried thyme
  • salt and pepper, to taste
  • 2 sprigs Fresh Parsley, chopped

Grilled cheese sandwich

  • 4 slices white bread
  • 2 tablespoons butter
  • 2 slices Gouda cheese, or Cheddar

Instructions

Tomato soup

  • Heat vegetable oil in a large, heavy-bottomed pot over medium heat.
    1 tablespoon vegetable oil
  • Add the finely chopped shallot to the pot and cook on low heat for about 5 minutes, stirring occasionally, until it becomes soft and translucent. Be careful not to brown it.

  • Stir in the minced garlic and cook for another 30 seconds until fragrant. Do not let the garlic burn.

  • Add the quartered tomatoes to the pot and gently fry for 1 minute, stirring to coat them with the aromatic oil. This step helps to release and deepen their natural flavors.

  • Pour in the vegetable broth, then add the sugar (to balance acidity) and the sprig of dried thyme. Stir everything together.

  • Place one slice of Gouda or Cheddar cheese between two slices of bread, ensuring the buttered sides are facing outwards. This creates two sandwiches.
