Ingredients

  • 2 ¼ cups crème Anglaise, or vanilla pudding
  • ½ cup dulce de leche
  • 4 eggs, size L
  • 4 tablespoons butter, unsalted, melted
  • ¾ pound Brioche bread , sliced into cubes of 1 x 1 inch (2 x 2 cm)

Instructions

  • Preheat your oven to 350 °F (175°C) for a conventional oven or 320 °F (160°C) for a convection oven.
  • Generously grease an 8 × 10 inch (20 × 25 cm) baking dish with butter to prevent sticking and add to the richness.
  • In a large mixing bowl (ensure it’s spacious enough to later add the brioche cubes), combine the crème Anglaise (or vanilla pudding), dulce de leche, eggs, and melted unsalted butter. Whisk until thoroughly combined and smooth.
    2 ¼ cups crème Anglaise, ½ cup dulce de leche, 4 eggs, 4 tablespoons butter
  • Add the brioche cubes to the custard mixture in the bowl. Gently stir until all the bread cubes are evenly coated and begin to absorb the liquid. Let it rest for 3 minutes to allow the brioche to soak up the creamy goodness.
    ¾ pound Brioche bread
  • Pour the brioche and custard mixture into the prepared baking dish. Bake in the preheated oven for approximately 30 minutes, or until the pudding is golden brown on top, set in the center, and irresistibly fragrant.

1. Dulce de Leche: While you can easily find ready-made dulce de leche in most grocery stores, making it yourself is a rewarding experience! There are several methods using condensed milk, from simmering a sealed can (be very careful with this method and ensure it’s fully submerged) to a safer oven or slow-cooker approach. You can find detailed instructions on different ways to prepare dulce de leche in my dedicated blog post about it. Homemade dulce de leche offers a depth of flavor that’s truly unmatched.

2. Brioche Substitute: Brioche is highly recommended for its rich flavor and texture. However, if brioche isn’t available, other rich kinds of bread like challah, pain au lait, or even good quality day-old white sandwich bread (preferably slightly stale) can be used. Ensure the bread is sturdy enough to hold its shape after soaking but soft enough to absorb the custard.

3. Fruity Variation: For a delightful fruity twist, consider lining the bottom of your baking dish with thin slices of banana before adding the bread pudding mixture.
