Ingredients

  • 2 slices bread
  • 15 grams basil
  • 50 grams Parmesan cheese
  • 3 tablespoons pine nuts

  • 50-100 mL olive oil
  • 1 slice Gouda cheese, mature
  • 1 slice ham , deli

Instructions

  • Prepare the Ham: Take the slice of deli ham and place it in a hot frying pan over low heat. Cook until it’s nicely browned and slightly crispy. Remove from pan and set aside.
  • Toast Pine Nuts: Briefly clean the frying pan. Add 1 tablespoon of pine nuts to the dry pan and roast them over low heat. Stir frequently until they are lightly golden brown and release a fragrant, nutty aroma. Be careful not to burn them as they can toast quickly.
  • Cool Pine Nuts: Turn off the heat and immediately transfer the toasted pine nuts to a small bowl to prevent further cooking. Set aside.
  • Make the Pesto Base: In the bowl of a food processor, combine the fresh basil, 50g of grated Parmesan cheese (or old cheese), the remaining 2 tablespoons of pine nuts, and the peeled garlic clove.
  • Process Pesto: Pulse the food processor until all ingredients are finely chopped and well combined. You’re aiming for a slightly coarse mixture at this stage.
  • Emulsify Pesto: With the food processor running on low, slowly drizzle in the olive oil, one tablespoon at a time, until the pesto reaches your desired consistency – smooth but still with a little texture. Season with salt and pepper if needed.
  • Assemble the Sandwich (Base): Take one slice of bread and generously spread about 2 teaspoons of the freshly made pesto on one side.
  • Layer Fillings: Place the slice of Gouda cheese directly over the pesto-smeared bread. Then, lay the crispy ham on top of the cheese.
  • Add Crunch: Sprinkle the reserved toasted pine nuts evenly over the ham.
  • Grill to Perfection: Top with the second slice of bread.
