- 1 tablespoon fish sauce
- 2 Beef tenderloin steaks

Put the julienned carrots in a colander and carefully pour the boiling water over them. This light blanching will soften them just enough while retaining a pleasant crunch.

Drain the carrots thoroughly to remove excess water. Transfer them to a bowl and mix with the sliced spring onions and fish sauce (or soy sauce). Toss gently to combine all the flavors.
