So, I was temporarily relieved of my duties as the holiday chef. Annoying at first, as I genuinely enjoy cooking, but it meant three glorious weeks of truly relaxing, with no kitchen responsibilities whatsoever. Of course, this also meant I ate far too much meat during our trip. So, upon returning home, I was more than ready to get back into our normal, healthier rhythm. The good news is, my family now tolerates a vegetarian dish occasionally – just not two days in a row. It’s progress, and these naturally vegetarian (and vegan-friendly!) lemon and mint popsicles are a perfect example of how delicious healthy eating can be.

Ingredients

  • ½ lemon
  • ½ limes
  • 350 ml water
  • 4 tablespoons confectioners sugar
  • 10 leaves mint

Instructions

  • Squeeze the lemon and lime.
  • Pour the water in the juice.
  • Stir in the icing sugar with the juice until it’s dissolved.
  • Wash the mint and tear it into small pieces and mix it with the liquid.
  • Pour the juice into the popsicles molds and cover that with a cap (in which the stick).
  • Put that at least 3 hours in the freezer so they freeze well.
