Select the ‘dough’ cycle, which will handle both the kneading and the first rise, usually taking about 1 to 1.5 hours. If kneading by hand or with a stand mixer, combine all bread ingredients except salt in a large bowl. Knead for 5 minutes until somewhat combined, then add the salt and continue kneading for another 10-15 minutes until the dough is smooth, elastic, and passes the windowpane test. Place the dough in a lightly oiled bowl, turn to coat, cover with plastic wrap or a damp cloth, and let rise in a warm, draft-free place for 1 hour until doubled in size.
