Ingredients
Raspberry cake (for the heart core)
- 400 grams raspberries, frozen
- 180 grams butter
- 140 grams sugar
- 2 eggs, size L
- 225 grams flour
- 15 grams baking powder
Outer Cake
- 250 grams butter
- 200 grams sugar
- 3 eggs, large
- 1 teaspoon vanilla extract
- 3 tablespoons milk
- 280 grams flour
- 20 grams baking powder
- ⅛ teaspoon salt

Instructions
Raspberry Cake (for the heart core)

Preheat the oven to 350 degrees Fahrenheit / 180 degrees Celsius. Prepare a small loaf or cake tin (e.g., 10x30cm or similar, lined with parchment paper).

Put the frozen raspberries in a saucepan and simmer on low heat for 10 minutes until they break down and release their juices.

Place a fine-mesh sieve over a bowl and pour the cooked raspberries into the sieve. Use a spoon or spatula to press as much liquid as possible from the raspberries, discarding the solids (seeds and pulp).

Measure the amount of raspberry juice. If it’s more than 40 mL, return it to the saucepan and boil gently on low heat until it reduces to exactly 40 mL. This concentrates the flavor. Let it cool completely to room temperature before proceeding.

In a large mixing bowl, cream together the softened butter and sugar for about 2 minutes using an electric mixer, until the mixture is light, fluffy, and pale yellow.

Add the eggs one at a time, beating well after each addition until fully incorporated. Scrape down the sides of the bowl as needed.

Gently pour the cooled 40 mL raspberry juice into the batter and mix thoroughly until evenly combined. The batter will have a beautiful pink hue.

Reduce the mixer speed to low. Gradually add the flour and baking powder mixture to the wet ingredients, mixing only until just combined and no streaks of flour remain. Be careful not to overmix.

Pour the raspberry cake batter into the prepared cake tin (10 x 30 cm) and bake in the preheated oven for 60 minutes, or until a wooden skewer inserted into the center comes out clean.

Once baked, remove the cake from the oven and let it cool in the tin for 5 minutes. Then, carefully invert it onto a wire rack to cool completely to room temperature.

Once completely cool, slice the raspberry cake into even pieces. Using a small heart-shaped cookie cutter, cut out a heart from the center of each slice. You will use these heart shapes for the main Valentine’s cake.

Store the raspberry cake hearts in an airtight container at room temperature until you are ready to assemble the main cake.

Preheat the oven to 350 degrees Fahrenheit / 180 degrees Celsius. Prepare the same 10 x 30 cm cake tin (or similar) by greasing and flouring it, or lining with parchment paper.

In a clean large mixing bowl, cream together the softened butter and sugar for about 2 minutes using an electric mixer, until the mixture is light, fluffy, and pale yellow.

Add the large eggs one by one, beating well after each addition until fully incorporated. Stir in the vanilla extract.

Pour approximately ¼ inch (½ cm) thick layer of the vanilla cake batter into the bottom of the prepared cake tin, spreading it evenly.

Carefully take the pre-cut raspberry cake hearts and arrange them in a single line down the center of the cake tin, standing them upright on the thin layer of batter. They should be placed one after another, touching slightly, to form a continuous line of hearts.

Gently pour the remainder of the vanilla cake batter around and over the raspberry hearts, ensuring they are completely covered and embedded. Don’t worry if the batter doesn’t initially come up very high on the sides; it will rise during baking to fully enclose the hearts. Bake for approximately 60-70 minutes, or until the cake is golden brown and a skewer inserted into the plain cake portion (not the heart) comes out clean.

Once baked, remove the cake from the oven and let it cool in the tin for 5 minutes. Then, carefully invert it onto a wire rack to cool completely to room temperature before slicing and revealing the beautiful raspberry heart design!
