Raspberry popsicle
- 500 grams raspberries, fresh, ripe for best flavor
- 100 grams honey (or agave syrup for vegan option)
- 60 ml water
- 150 ml cream (heavy cream or soy milk for lactose-free)
- 1 tablespoon rose water (adds a beautiful floral aroma)
Raspberry popsicles with champagne
- 750 ml Champagne (or Prosecco, Cava, or sparkling cider)
- 10 raspberry popsicles (prepared from the above recipe)
- 10 grams rose petals, biological fresh (for garnish, optional)

Instructions
Raspberry popsicles

Wash the raspberries thoroughly under cold water.

Put the washed raspberries with the water and rose water in a blender and puree until completely smooth.

Sieve the raspberry puree through a fine sieve to remove all the seeds, ensuring a perfectly smooth popsicle base.

In a separate bowl, mix the sieved puree with the cream (or soy milk/coconut cream) and honey until everything is well combined and evenly sweetened.

Carefully pour this delicious mixture into 10 shot glasses, leaving a little room at the top. Place a small cocktail fork or spoon into the center of each glass, which will serve as a handle once frozen.

Cover the tops of the shot glasses with plastic foil, gently piercing the foil where the spoon/fork is inserted to help it stay upright. This also prevents freezer burn.

Place the shot glasses in the freezer and allow them to freeze for at least 8 hours, or preferably overnight, until they are completely solid.

Once frozen, carefully take the popsicles out of the glasses. You might need to briefly run warm water over the outside of the glass to loosen them. Store them in an airtight container in the freezer until ready to serve.

When ready to serve, pour your well-chilled champagne (or chosen sparkling wine/beverage) into elegant flutes or coupe glasses.
