  • 1 tablespoon dried thyme
  • 1 tablespoon dried rosemary
  • 3 cloves garlic, squeezed
  • ½ pound carrots, cleaned and cut into cubes
  • 1 sweet point pepper, washed and without seeds. Cut into cubes.
  • 1 red onion, cut into rings
  • 1 zucchini, washed and diced
  • ¼ pound green asparagus tips, washed
  • 2 pounds pommes duchesse
  • 4 hamburgers, each burger cut into quarters

Instructions

  • Preheat the oven to 430 °F or 390 °F (220 °C or 200 °C fan-assisted).
  • In a small bowl, mix the extra virgin olive oil with the dried thyme, dried rosemary, and squeezed garlic to create a fragrant herbal flavored oil.

  • Place all the prepared vegetables (carrots, sweet point pepper, red onion, zucchini, and green asparagus tips) in a large mixing bowl.

  • Pour the herb oil over the vegetables in the bowl. Mix everything thoroughly using your hands or a large spoon, ensuring all vegetable pieces are evenly coated with the flavorful oil.

  • Take a large baking tray and arrange the pommes duchesse and the marinated vegetables as much as possible in a single, even layer. Evenly distribute the quartered burger pieces over the vegetables and potatoes.

  • Carefully place the loaded baking tray into the preheated oven. Bake for approximately 20 minutes, or until the pommes duchesse are golden brown and crispy, the vegetables are tender and slightly caramelized, and the burger pieces are thoroughly cooked. Serve hot and enjoy!

1. Burgers: Instead of beef hamburgers, you can easily use other types of burgers (chicken, turkey, or even vegetarian options) cut into small pieces. Sliced sausages or wrapped beef rolls (often called “rundervink” in Dutch, which might be the original “beef finch” reference) also work well.

2. Pommes Duchesse: Both frozen and fresh pommes duchesse are suitable for this recipe, and no prior thawing is necessary for frozen ones. Excellent substitutes include potato slices, potato wedges, diced sweet potatoes, or potato waffles for similar ease and texture.

3. Roasted Vegetables: The listed veggies offer a fantastic flavor profile, but feel free to customize! You can replace one or more vegetables with pumpkin cubes, sweet potato cubes, parsnip cubes, broccoli florets, or different colored bell peppers. Ensure pieces are roughly uniform in size for even cooking.
