Lavender lemonade

  • 15 grams lavender, fresh, biological (culinary grade, unsprayed)
  • 200 grams sugar
  • 1000 ml water
  • 300 ml lemon juice, freshly squeezed

Lavender lemonade

  • Put the sugar and the lavender in a bowl and rub them together with your fingertips until the sugar absorbs the fragrant aroma of the lavender. This step helps release the essential oils from the lavender into the sugar.
  • In a saucepan, add 2 cups (approximately 500 ml) of water and bring it to a rolling boil over medium-high heat.
  • Once the water is boiling, add the fragrant lavender sugar mixture to the saucepan. Stir continuously until all the sugar has completely dissolved, forming a clear syrup.
  • Remove the saucepan from the heat. Let the lavender syrup steep for about 30 minutes. This allows the lavender to infuse its flavor and aroma deeply into the syrup.
  • Strain the lavender syrup through a fine-mesh sieve into a clean container to remove all the lavender flowers. Discard the spent flowers. Place the sieved lavender syrup into the refrigerator to cool completely for at least 30 minutes, or until thoroughly chilled.
  • Once the lavender syrup is fully chilled, combine it with the remaining fresh lemon juice and the remaining water (or sparkling water, if using) in a large pitcher or jar. Stir well to ensure all ingredients are thoroughly mixed. Store the finished lavender lemonade in the refrigerator until you are ready to serve.

Serving

  • Just before serving, fill your serving jar or individual glasses with plenty of ice cubes. Add slices of fresh lemon and a few sprigs of fresh lavender for an appealing garnish. Pour the chilled lavender lemonade over the ice and serve immediately. Enjoy!

Notes

  • If you like bubbles in your lemonade then add sparkling water instead of plain water.
  • If you don’t have lavender flowers or you want to vary in lemonade you can also use leaves of violet or roses.
  • Use unsprayed (lavender) flowers. Ordinary plants from the garden center can contain toxins. Make sure you only harvest flowers if you’re sure they are not sprayed.
