Ingredients

  • 4 egg whites
  • cup sugar
  • 1 tablespoon speculaas spice mix
  • 1 tablespoon water

Instructions

  • Preheat your oven to a low temperature of 210 °F (approximately 99°C) or 195 °F (90°C) for a slower bake, which helps to dry out the meringues perfectly without browning them.
  • Prepare a baking sheet by lining it with parchment paper. This prevents sticking and makes for easy removal of the delicate meringues.
  • Fit a piping bag with a large nozzle that has a serrated edge. This will create beautiful, textured swirls for your meringues.
  • In a meticulously clean bowl (ensure it’s free of any grease by washing it with hot water and detergent, then drying thoroughly), place the 4 egg whites. Begin beating them with an electric mixer until they start to stiffen and hold soft peaks.

  • Gradually add the sugar, one tablespoon at a time, while continuously mixing. Continue to beat until the egg whites are very stiff, glossy, and form firm peaks. The meringue should be thick and smooth, with no grittiness from undissolved sugar.

  • In a small separate bowl, combine the speculaas spice mix with water until it forms a smooth paste. This will be used to create beautiful spice streaks in your meringues.

  • Gently spoon the stiffened egg whites into the prepared piping bag. Pipe beautiful, individual foam turrets or swirls onto the parchment-lined baking paper. Ensure there is some space between each meringue as they will hold their shape.

  • Carefully place the baking tray into the preheated oven and bake for a full 2 hours. The low and slow baking time is key to achieving perfectly crisp and dry meringues. Do not open the oven door during baking.
  • Once baked, turn off the oven but leave the meringues inside with the door slightly ajar. Allow them to cool completely to room temperature within the oven. This gradual cooling prevents cracking and ensures the meringues remain perfectly crisp.

1. Achieving Perfect Egg Whites:

  • The foundation of great meringue lies in perfectly beaten egg whites. It is crucial that not even a speck of egg yolk contaminates the whites, as any fat will prevent them from whipping up properly. Separate your eggs carefully, ideally one at a time into a separate small bowl before adding to your main mixing bowl.
  • Always ensure your mixing bowl and whisk attachments are impeccably clean and grease-free. A simple but effective trick is to wipe them down with a slice of lemon or a tiny bit of vinegar, then rinse and dry thoroughly before use. This removes any invisible grease residue that could hinder stiff peaks.
