Ingredients

Salsa

  • 1 red chili pepper, seeds removed for less heat, or left for more spice
  • 1 tablespoon balsamic glaze

Pumpkin soup

  • 2 bulbs garlic, unpeeled
  • 1 tablespoon olive oil, extra vierge, for roasting garlic
  • 2 twigs fresh thyme
  • 1 butternut pumpkin, about 3 lbs / 1.5 kg, halved lengthwise and seeds removed
  • 2 tablespoons olive oil, for cooking onions and pumpkin skin
  • 2 onions, finely chopped
  • 1 liter chicken stock, low sodium or unsalted preferred
  • 1 teaspoon salt, or to taste
  • teaspoon ground black pepper, or to taste

Garnish, optional

  • 4 twigs fresh oregano, freshly chopped for serving
  • 1 tablespoon olive oil , extra vierge, for drizzling

Preparation

  • Preheat your oven to a high temperature: 430 °F (220°C) for a quicker roast, or 390 °F (200°C) if you prefer a slightly slower roast.

Roasting vegetables in the oven

  • On a large piece of aluminum foil, place the unpeeled garlic bulbs and fresh thyme twigs in the center.

  • Drizzle 1 tablespoon of olive oil over the garlic and thyme. This helps them roast beautifully and keeps the garlic tender.

  • Carefully fold the aluminum foil into a sealed package, then place it on a large baking sheet. This steams the garlic while it roasts, making it extra soft and sweet.
  • Arrange the whole tomatoes and red chili pepper (or bell pepper for a milder salsa) directly on the same baking sheet, alongside the foil packet.

  • Take your halved butternut pumpkin. Lightly brush the cut side and skin with olive oil, then place it cut-side down on the baking sheet. Roasting this way helps soften the flesh beautifully and develops deep, sweet flavors.

  • Place the baking sheet in the preheated oven and roast all the vegetables for an initial 15 minutes. This gives the tomatoes and pepper a head start in softening and charring slightly.
  • Carefully remove the baking sheet from the oven. Take out the roasted tomatoes and red pepper and set them aside for the salsa. Return the baking sheet with the garlic foil packet and pumpkin to the oven to bake for another 20-30 minutes, or until the pumpkin is perfectly fork-tender and beautifully caramelized.

Preparing the salsa

  • While the pumpkin finishes roasting, gently peel the thin skin from the roasted tomatoes (it should come off easily after roasting). In a food processor or blender, combine the peeled tomatoes, the roasted red chili pepper (remember to remove seeds for a milder salsa), and the luscious balsamic glaze. Blend until you achieve a wonderfully smooth and vibrant salsa.

  • Transfer the freshly blended salsa into a small bowl. This can be covered and set aside until you’re ready to serve the soup, allowing the flavors to meld further.

Preparing the pumpkin soup

  • Once the pumpkin and garlic are perfectly roasted and tender, remove the baking sheet from the oven. Allow them to cool for about 10 minutes – this makes them much easier and safer to handle.
  • In a large soup pot or Dutch oven, heat two tablespoons of olive oil over medium heat until shimmering.

  • Add the finely chopped onions to the hot oil and sauté gently for about 10 minutes until they become translucent, soft, and glazed, taking care not to let them brown. Meanwhile, carefully squeeze the soft, roasted garlic cloves out of their bulbs directly into the pan with the onions. Stir well and cook for another minute to meld the savory flavors.

  • Once cooled, scoop out any remaining seeds from the roasted pumpkin halves. Then, using a sturdy spoon, gently scrape the tender, fragrant pumpkin flesh directly into the soup pot with the softened onions and garlic.

  • Pour in the chicken stock (or vegetable stock for a vegetarian version). Stir well to combine all the ingredients, then bring the mixture to a gentle boil. Once boiling, reduce the heat to a low simmer.

Then, using an immersion blender, carefully purée the soup directly in the pot until it is completely smooth and velvety. Alternatively, if you don’t have an immersion blender, transfer the soup in batches to a regular blender and blend until perfectly smooth (use caution with hot liquids).

  • Gently reheat the soup if needed, then taste and adjust the seasoning with salt and freshly ground black pepper until it’s perfect for your palate. Remember that the amount of salt needed will depend on the sodium content of your chosen stock.
